Clam Fritters
1 pt Clams 1 tb Baking powder 1 1/2 ts Salt 1 c Milk 1 tb Butter 1 3/4 c Flour, all-purpose 1 ts Parsley, chopped 2 Eggs, beaten 2 ts Onion, grated Keywords: Fish, Main dish, Snacks, seafood Servings: 4 Drain clams and chop. Combine dry ingredients. Combine eggs, milk, onion, butter, and clams. Combine with dry ingredients and stir until smooth. Drop batter by using teaspoonsful into hot shortening at 350 degrees F and fry for 3 minutes, or until golden brown. Drain on absorbent paper. From "Southern Living" Posted by Bob Springer 3/93 |
